Evaporation: It is the process of conversion of liquid into gaseous state.
An earthen pot(matka) has large number of pores on it’s body.Hence, many drops of water will come out through these pores and will get evaporated from it’s surface.
Evaporation is a process which requires heat. Here, the heat required for evaporation comes from inside the pot. And therefore, the water inside the pot keeps losing heat.
Hence, the water kept in an earthen pot(matka) become cool during summer.
